What are the Processes Used by Large Companies to Make Chocolates

How do large companies make chocolate? For one, they need capital to be able to buy the equipment they need and also the ingredients.

As we all know that the there are not many places on the earth where the cocoa tree is being found these companies have to move as far as to South America, the ivory coast and if possible even to deep jungles of Ghana because deep in these jungles is what they want.. "The Cocoa tree"

These trees grow a melon like fruit that is harvested by hand and inside, there are 20 to 40 seeds which are the cocoa beans.

Once the cocoa beans are removed, they are placed in large heaps or piles in a process known as fermentation. This usually takes a week giving the shells time to harden, the beans darken and the cocoa flavor develop. Afterwards, these are then transported to the chocolate factory.

Since companies that import cocoa beans order these in vast quantities, it is more practical to transport these back to the US by ship than by air. Once they reach the dock, it is then transferred to rail road cars on the way to the factory so they can be cleaned and stored.

The chocolates taste different because of the cocoa that comes from different countries. The process of making chocolate is then started by roasting the cocoa at a very high temperature in revolving roasters.

Next, a special hulling machine dries it so the shell of the bean is removed and its content known as the nib is the one that is actually used in making chocolate.

The next step is to turn the nibs into its liquid form. This process is known as milling and to give you that added taste, other ingredients are added and these include chocolate liquor, cocoa butter, sugar and milk.

What really is chocolate liquor? It is a simple combination of milk and sugar. The end product of this coarse brown powder called a chocolate crumb. As for the milk, it is taken from farms where the milk is tested, pasturized, Uht Treated and then this milk is being mixed together with sugar to form a thick liquid material.

Afetr this is done, cocoa butter is thrown into it to bring out the taste and the rich creamy look of the chocolate. After this another machine which is known as steel rollers grind and refine the mixture to make it much more smoother

What we get now is known as the chocolate paste. To make this paste clean from the sandy particles, it is kept inside a machine called the conches for 1-3days.

The liquid form of chocolate is poured into the mold after the paste smoothens up. Large companies do it very quickly and efficiently as they produce thousands of these in one minute. If any dry fruits or other ingredients are a part of the final product then this is the stage where they are added.

The air bubbles are then set free from the machine through a cooling tunnel so the chocolate is evenly settled and the chocolate paste is turned into the solid form.

Lastly, it is wrapped up, put in boxes and delivered to the stores. They are available to be sold now.

They are put in shelves by the shopkeepers and are usually in the front so the customers dont forget to buy their favorite chocolates. The chocolate lovers will still love their chocolate even if they dont know how they are made.
