Desserts with a Healthy Twist

Let's face it, when you've had a busy day, you want to be able to come home and unwind. Maybe enjoy some white wine and cheese, or maybe a delicious chocolate dessert. While we certainly deserve our treats, some of these can add unwanted pounds. For dessert-lovers, the trick to keeping trim is to create your own unique recipes. Here a just a couple of simple ideas that you might enjoy.

Now remember, whether you're cooking a meal or baking a dessert, take the time to make it fun - be creative and don't make it too difficult. It can be as easy as taking a store-bought mix and adding some special ingredients of your own. Be sure to substitute the healthiest ingredients you can so the dessert is delicious but less fattening.

Here's a fun cookie recipe to try that starts with a box of double chocolate cake mix. With a few minor adjustments you can easily create pancake cookies, and they will even be low fat too. All it takes is combining your mix with one half cup of soymilk, 2 caps of vegetable oil and a little water. Mix until the consistency is like cookie dough, then spoon on a pan and bake in the oven for about 10 minutes. If the cookies become too puffy during baking, just take a spatula or fork and flatten them to look more like pancakes. Once they're done, remove and cool on a cooling rack.

As they cool, cut up some fresh strawberries and then take one of the cookies and sprinkle the fruit on top. If the cookie is still warm, it will have a very soft texture and will blend nicely with the fruit. I suggest also grabbing a glass of nice, cold soymilk to compliment the chocolate taste, Grab a fork and enjoy!

Another quick and healthy idea is to grab a box granola and a variety of mixed berries from your grocery store. Take the berries and heat them up in the oven for about 5-10 minutes. Then take the granola, add a bit of soymilk and heat it up in the microwave for a little less than a minute. Place the heated fruit on top, stir it up and indulge. This taste pairs perfectly with a nice herbal tea.

These are just a couple of simple recipes that anyone can make. You can come up with other great creative healthy dessert ideas of your own. Remember that a dessert doesn't have to be overly fattening or rich to be very satisfying. Have fun with trying different combinations and you'll find you can create wonderful desserts that you can call you're very own.

A Clambake for Christmas

Clambakes have been around for a while now, in fact, they were introduced by Native Americans a hundred years ago. They are more known as New England Clambakes as they originated in the New England area. Originally, clambakes were prepared in a pit wherein a layer of stones are placed on the bottom of it. And on top of these very hot stones, a layer of potatoes, live lobster, clams, and corn husks were laid with fresh seaweed separating the layers.

In order to cook the fresh seafood and vegetables, the Native Americans would make a large fire in the pit, on top of the stones. After the fire has been reduced to hot ash & embers, they would then put the seafood on the hot stones.

Clambake orders generally come in two different varieties, the standard clambake and the super deluxe clambake. Making Chicken Noodle Soup in the Crockpot

It is true that you can use your crockpot to make a wonderful kettle of chicken noodle soup. While you are busy doing something else, it will be simmering away, creating a delicious bowl of healthy goodness. Whether you are an accomplished cook who uses only the freshest ingredients, or if you only cook when you absolutely have to with ready-made ingredients from the store, you can make a tasty chicken noodle soup in the crockpot that will be much better than canned soup.

If You Use Only the Freshest Ingredients...

If you prefer only fresh ingredients from the farmer's market, the crockpot can still serve you well. Take the skin off your chicken before cooking. You can use whatever you have on hand... a whole chicken, parts, or boneless pieces. Place the chicken in the crockpot with enough liquid to cover it. Add a stalk of celery, a whole carrot, half an onion or whatever you want to help flavor your broth. Simmer on high for at least 3 or 4 hours.

When the chicken is cooked thoroughly, remove it and let it cool. Remove the celery, carrot, onion, and anything else you can strain out of the broth. Throw the vegetation away. Once cooled, remove the meat from the bones and cut into bite-size pieces. Add the meat back to the crockpot. Add some more chopped fresh celery, sliced carrots, some crushed garlic, parsley and any other tasty vegetables you may want to add. Sweet potatoes, rutabagas, and parsnips are also nice in this soup.

Keeping the crockpot on high let it cook for a couple more hours. Do not open the lid until it is time to add your noodles. Taste the broth about 45 minutes before you want to serve the soup. Add salt and other seasonings as needed. Add your noodles. This can be egg noodles, linguine, fettuccine, or any other noodle you prefer. Perhaps you have made homemade noodles to add... if so, they only need to cook about 20 minutes until they are tender.

Simply Easy Chicken Noodle Soup

If you are not too handy in the kitchen, you can still make a terrific soup. chicken noodle soup recipes like this are so simple even an older child could make it. Use chicken leftover from another meal or get one of those tasty rotisserie chickens at the store.

Put your chicken in the crockpot. Add a large container of chicken broth, covering the chicken. Simmer your soup on the high setting for three or four hours. Take the chicken out and let it cool so you can remove the bones. Slice up the meat and add it back to the soup.

Get a bag of baby carrots at the market and drop them in. No preparation needed! Alternatively, you can cut up your favorite vegetables to add, or use frozen vegetables if you prefer. Leave the soup to cook another couple of hours.

About 45 minutes before serving your soup, drop in your favorite noodles. Egg noodles, soba or udon noodles, or even wagon wheels will work in your soup. If you have a small amount of noodles in your cupboard, mix, and match if need be to get the right amount for your soup. If you have large noodles like lasagna noodles, just break them up so they will be bite size.

How to Make Pancakes from Scratch

Making pancakes is not hard at all. You can make delicious fluffy pancakes with just a few simple steps. Make sure you have a recipe to follow and that you buy all the ingredients you will need ahead of time so that you aren't missing anything later on.

Step one, measure the dry ingredients correctly. If the recipe calls for sifted flour, make sure put it through a sifter as instructed. Make sure you measure out the right amount of the ingredients or you could end up with a mess in the end.

Step two, measure out all the wet ingredients just as precisely as you did the dry. Use the right measuring cups and double check that you did them right. Crack open the eggs separately just in case you get a bad egg, and beat the first.

Make two separate bowls, one for the wet ingredients, and one for the dry ingredients. Mix them each separately very well. Stir the dry ingredients with a spoon and beat the wet ingredients together so that they are completely incorporated.

Now pour the wet ingredients over the dry ingredients. Stir the entire amount until it forms a batter. Be gentle. Do not over-beat the ingredients or else the pancakes will be tough. You do not want tough pancakes. Just stir until combined.

Heat a pan or griddle to medium high heat. Lightly grease the pan with oil, butter, or cooking spray. Don't use too much or you will fry the pancakes. Make sure the pan is hot enough before you begin.

Now pour some of the batter onto the pan. Use a ladle or measuring cup and measure out about a quarter of a cup. You can use more if you want bigger pancakes or less if you want smaller pancakes. Add a little milk to the batter if you want thinner pancakes.

When tiny bubbles form after about a minute, flip them over and cook for another minute. When they are golden brown, remove them from the pan, and serve them warm with butter and syrup.

A modern BBQ pit is typically constructed above ground. Stone, brick and concrete are the most common materials used for building such a structure. There's a firebox in which charcoal or wood can be set on fire. You install a grill at a level that isn't too close to the coals so the meat won't burn.

With an open pit BBQ there are two ways of cooking your food. You can use either indirect or direct heat. Where Does a Lobster Live?

Be it ever so humble, where does a lobster call home? Lobsters live in the coastal regions around the world. Once shunned and now cultivated for human consumption, lobsters have come to be one of the most sought-after delicacies in the world.

Right after he's born, a very tiny lobster looks nothing like an adult lobster and has a 1/1000 chance of surviving to adulthood. During the first 15 days of his life, he lives in the top three feet of water in the ocean and is extremely vulnerable to predators. During this period he molts three times before moving into the fourth stage as a miniature adult.

During the fourth stage the lobster swims very well and looks for a permanent place to live on the ocean floor. He may choose a home in a softer habitat, such as the salt marsh peat around Cape Cod, but most generally he'll choose a harder spot, such as an area with a cobble (small rocks) bottom.

Lobsters choose to live in cobble because it allows them to use its many tunnels and crevices to hide and wait for food to come drifting down. A lot of lobsters live on the Maine coast, because not only does it have the cobble bottom they want, it also has an abundance of clean, cold water.

Shortly after he molts for his fifth time, he moves to the new location he has found on the ocean bottom. For the first year or so in his new residence, he remains hidden in his tunnel or crevice so that his predators can't find him. As he gets a little larger, say after his first year there, he begins to hide in the kelp and search for food. He'll continue to do this for another three years.

Before reaching maturity our lobster will seldom attempt to swim out in the open ocean. His survival instincts tell him that it isn't safe there, and he's right. If he ventured out too far, he'd be eaten within minutes. Only when he reaches maturity does he make another move which will most like be to an area with larger rocks. Other choice residences can be in sandy or muddy areas reaching out to the edge of the continental shelf. He always looks for a one-lobster dig, because he prefers to be alone.

It's hard for a lobster to live to be very old. It has natural predators and fishermen after it no matter where it goes. Going back in history, back to a time when lobsters were plentiful and people didn't fish for them, we find records of lobsters reaching five or six feet in length.

During modern times, the largest lobster on record was caught off the coast of Nova Scotia in 1977. This monster lobster was between three and four feet long and weighed 44 lbs., 6 oz. He was thought to have been around 100 years old. Believe it, or not!
