The most important quality of a bbq grill is the ability of the charcoal grill to cook. After all, while durability is my second choice for what to look for, I could not make it the first because why would want a grill that can't cook to last forever? When you go to a restaurant and order a steak, did you realize that they are able to cook them at over 1000 degrees? This is why the number one grill, year after year, is Weber. The difference is they are small dome shaped grills.

Either the fire was burning too hot or never got hot enough. You need to be slow and methodical by paying attention to what you are doing when it comes to controlling a fire, which is an important part of a successful barbecue. The other thing that frequently happens is that it can always take longer than you think to grill the meat, so the guests start getting hungry or the person in charge is antsy because you are off the planned schedule.

Gas grills can be connected directly to a gas line on your home or fueled with a refillable propane tank. With charcoal grills you are somewhat limited in your control of the temperature that you cook on.
