I know that just about everyone has some kind of favorite food they love to eat! Some people like pizza. Some like mashed potatoes with grilled chicken. Others like hamburgers. My grandmother's recipe for chicken pot pie happens to be the very best food I have ever eaten.
My grandma took a whole chicken and covered it with water in her cast iron pot. I always knew what she was doing when that happened. She added onions, and chopped garlic with fresh rosemary, salt, pepper and turmeric. She would then set the pot on the stove, cover it and let it boil.
Those cookies were to die for! Oh boy, what could be more scrumptious? I had never tasted anything so good in my life! Momma even liked them and she never liked sweets anyway. She just baked things for us because we liked them.
That year momma made cookies for my whole class! She shared them with family and friends and everyone just loved them. My dad would steal some to take to work and he told my mother that the men loved her cookies too! I think she felt good that so many people like her baking!
One evening, unannounced, they both came to my door virtually at the same time. Before I could stop it, the damage had begun. The recipe for catastrophe was in the making. The jealousy was flaring.
Grandma is gone now. But, I remember her every time I make this dish for my family. I see my daughter's eyes glow just from the mention of this food. She is just like I was. It is an easy recipe and will stand the test of time. I miss grandma but, her legacy, and food, lives on.
