Sushi Fish Rolls - A Connoisseur's Delight

Sushi rolls are the most popular form of sushi. Japanese and American restaurants serve two types of sushi to their patrons.

Sushi rolls served with seaweed or nori outside are one variant. The second type is the one which has nori inside the sushi roll.

Presence of nori be it inside or outside changes dramatically the flavor and texture of sushi rolls.

Those who enjoy nori often prefer the style of sushi roll where the nori is on the outside of the roll. This style of sushi roll is called futomaki.

A sushi roll with the nori on the inside is called uramaki.

Futomaki rolls are often served by Japanese restaurants or sushi bars. Even grocery stores keep futomaki sushi rolls.

A typical futomaki sushi is vegetarian but has fish eggs as toppings. Generally futomaki is cut into pieces and then served. However, on certain Japanese festivals it is offered as a roll.

Since Japanese prefer to eat with their fingers, uramaki is not a preferred choice. Uramaki is sticky and difficult to eat with fingers or chopsticks. On top of that it falls apart under pressure. Moreover, a uramaki sushi roll is essentially non-vegetarian with fish eggs or sesame toppings.

Since most Americans do not fancy futomaki with its black coating, uramaki is the preferred form of sushi rolls.

Hosomaki stands out in the entire sushi rolls family. As with futomaki, hosomaki is served with seaweed on the outside of sushi rolls.

Hosomaki has four variants known as Kappamaki, Tekkamaki, Negitoromaki and Tsunamayomaki.

Kappamaki contains cucumber, as well as some other ingredients, and is used to cleanse the palate between raw fish dishes and other parts of the meal.

Tekkamaki is the tuna sushi roll, named after the red color of the fish meat.

Negitoromaki variety of sushi rolls has scallions and tuna in them.

The fourth variety of hosomaki, that is Tsunamayomaki, has canned tuna and mayonnaise in it. Such sushi rolls are easy to prepare at home and can be tried by any sushi enthusiast.

Wanted - Home Cooks Searching for the Best Stainless Roasting Pan for Creating Their Holiday Meal

Picture your jovial, smiling family sitting down to a delicious holiday meal. All of your hours of planning and preparation have been worth it. Now imagine your panic as you take a burnt turkey out of the oven. Choosing the best stainless roasting pan goes a long way to helping you to create a perfect holiday meal. A bad pan could result in unevenly cooked meat, a pan so heavy that the roast is dropped, and scorched gravy.

First, the size of the roasting pan matters. Ideally, your pan should fit in your oven and still leave 2 inches for air to circulate between it and the sides of the oven. In addition, you don't want a pan so large that the juices from your average roast will have too much room to spread and will burn.

The metal or alloy that your roasting pan is made of is also essential to consider. Things such as weight, sturdiness, and heat conductivity vary from pan to pan. The best heat conductor is aluminum, but it can react badly to acids in some foods. Stoneware is nice but it can be heavy and sometimes fragile. The best choice is a sturdy stainless steel roasting pan, layered in with aluminum and maybe copper. This gives you the best heat conductivity, low reactivity to acids in foods, and a good weight.

Your turkey roasting pan must also be able to stand up to high oven temperatures and the high direct heat of the stove top. You often will want to use your roaster on the stove top to sear the meat and also to make gravy after roasting. Some lightweight pans can buckle under high-heat conditions. The poorly made pans can also distribute heat unevenly and cause burning and scorching of your roast or gravy.

Did you ever consider the handles on a pan? Easy to forget about, but essential when you are removing that heavy, hot pan from the oven. The best handles are strongly riveted to the pan and stand straight up from the pan so oven space is not wasted. Cheaper handles stick straight out from the pan or even worse, fold down. Try getting your potholder-covered hand through that handle easily. In addition, you should choose a rectangular pan with rounded corners that facilitate easy cleaning. The height of the sides of your pan should be 2.5 to 3 inches, which is the happy medium to allow air to circulate, yet won't allow hot juices to spill easily.

Additional items you may look for to go with your pan are forks and a rack. Heavy forks are very much appreciated at that moment when the roast or turkey must be transferred out of the pan.

The coffee ceremony in Ethiopia is an important part of their social life and cultural life. Whenever you are invited by an Ethiopian to his/her traditional coffee ceremony, it means you have been accepted as a friend and you have also earned their respect. It is an excellent example of their hospitality.

Most people who find themselves as guests in their house would never fail to notice, the coffee ceremony Ethiopians are quick to present to their guests or visitors.

Ethiopians are very adoring of their coffee and their coffee ceremony never fails to be an extra-ordinary event.

The extended Ethiopian coffee ceremony starts with the ceremonial equipments being arranged upon a bed of long scented grasses. After that, the coffee is roasted on a level roaster above a small charcoal furnace, the aromatic smell blending with the heady scent of incense that is also customarily burned during the Ethiopian coffee tradition.

Next, the woman who is in charge of the coffee ceremony carefully washes the handful of coffee beans on the heated furnace, then stirs and shakes the remains away. Once the coffee beans have turned black and shining and the aromatic oil is coaxed out of them, they are ground by a pestle and a long handled mortar.

The ground coffee is slowly stirred into the black clay coffee pot locally known as 'jebena', which is round at the bottom with a straw lid.

Due to the archaic method used by Ethiopians, the ground result can be called anything but even, so the coffee is strained through a fine sieve several times.

As the coffee gets ready to be served, the youngest individual is picked to announce the start of the coffee ritual. At which time, the very person (usually) will stand by prepared to hand over the coffees being poured in the small china cups, by the woman in charge. The first cup is, almost all the time, served to the eldest person in the room, with the youngest being the last.

The lady finally serves the coffee in tiny china cups to her family, friends and neighbours who have waited and watched the procedure for the past half-hour. Gracefully pouring a thin golden stream of coffee into each little cup from a height of one foot without an interruption requires years of practice.

Homemade Pasta Using Your Pasta Machine

Pasta is comfort food, whether or not you grew up in an Italian kitchen. Some of my first memories are of eating spaghetti, slurping up the long noodles and licking up the sauce. The ingredients in pasta are so simple, flour, eggs, olive oil and water. How can something so simple taste so good? If you have never made your own pasta at home it is time to treat yourself. Homemade pasta is one of the great marvels of the kitchen. So, roll up your sleeves, gather the kids or grandkids, friends and family and get ready to transform wet and dry ingredients into dough. And from the dough into noodles and from noodles into comfort food.

A pasta machine is one of the tools that makes the job of turning dough into noodles easier. You can do it the old fashioned way and roll your dough into thin sheets using a wooden rolling pin, but I find that a uniform thickness is best achieved using a machine. There are electric machines and there are manual machines that you crank by hand. Weston, Lello and Imperia pasta machines are well known brands of electric pasta makers. The Kitchenaid pasta attachment is an wonderful addition to the Kitchenaid mixer for making pasta. Atlas, Imperia and CucinaPro are all good manufacturers of manual pasta makers. I personally have used the Atlas pasta machine for many years with absolutely delicious results.

If you are going to mix the dough by hand, start by placing the flour in a large bowl and make a well in the center. Crack the eggs into a smaller bowl and beat them lightly to break the yolks. Add the oil and water and mix well before pouring the liquids into the well in the center of the flour. Continue to mix with a fork or a wooden spoon until the dry ingredients are moistened and begin to clump together. Now roll up your sleeves and get ready to get your hands on the dough to finish the mixing.

Put a small bit of flour on your hands before touching the dough so it doesn't stick to your fingers. Begin kneading the dough in the bowl by taking the dough from the sides, folding it onto the center, pressing down and out with the palm of your hand and repeating the process. Rotate the bowl as you are kneading to make sure that all of the dough gets folded and pressed into itself. When the dough becomes one clump and is no longer sticking to the sides of the bowl, turn it out onto a lightly floured board and continue kneading for 2 to 3 minutes. The dough should be soft and elastic, smooth and shiny.

The dough should be smooth and shiny on the outside, soft throughout with no lumps, and it should be stretchy. If the dough seems too sticky or hard, you may want to adjust it with small amounts of water or flour until you get the right consistency. All pasta dough benefits from resting before rolling it out. Let your dough rest for about 30 minutes at room temperature, during which time the dough will soften and relax.

The basic steps in rolling out pasta dough are to run the dough between the rollers of the pasta machine beginning on the thickest setting and gradually rolling the dough on narrower settings. You do not want to roll all the dough at once; there's just too much of it, so it is easier to cut the dough into quarters and roll one piece at a time. You will end up with 4 or more elongated rectangular sheets of dough, ready to be cut into any shape you want. Some shapes like papardelle, which are strips about 1 1/2 inches wide, can be cut by hand. All pasta makers come with one or more attachments for cutting the dough, the most popular being tagliatelle and tagliolini. Some of the electric models will have an attachment that extrudes the dough to create circular shapes like spaghetti and capellini.

After you have cut and shaped your pasta, the pasta needs to dry out a bit before it is cooked. Dry the pasta at room temperature on a lightly floured board or baking sheet. The flour helps keep the pieces of pasta from sticking to each other and helps seal the noodle. If you have made more pasta than you need for the meal you can freeze it on a baking sheet and then put the frozen pasta into freezer bags or containers for future use. If you just had a ravioli making party, you will be able to enjoy homemade raviolis any time. Pasta also dries well, although you will still want to cook it us within a couple of days because your dough does not have preservatives in it. Long pasta shapes can be dried in little nests or you can use a pasta drying rack, which allows you to dry the pasta as long threads.

Once your family has had a hand in making fresh pasta at home and eating the results, you won't want to go back to commercially processed pasta again. Homemade pasta has a delicate, rich flavor and a smoother texture than store bought pastas. Making pasta at home is a fun family project that everyone can do together and it will become one of the warm and comforting memories you share in the future. So start a family tradition of fun and laughter and good food. Make pasta-making a regular event in your kitchen.

7. You should never cook your food more than it is necessary. Sometimes overcooking the food at high temperature can eventually destroy the nutrients present in it. Always steam or stir fry your vegetables.

8. Always go for natural food rather than preserved or processed food items. You can use herbs, tomatoes, vinegar, salads and onions as much as you can.

So the next question is after getting a spice rack, what spices should be placed in it? Some spice racks can be purchased with spices included in nice containers ( again in either wood, metal, plastic, or acrylic ). Some spice rack continues has the kind of spice preprinted on the apex of every one of the individual boxes.

Spices are defined as a dried seed, root, bark, fruit, leaf or veggies used in small quantities to add flavor or color to your food. You may commonly find the following spices in a spice rack, especially if you purchase a spice rack that already contains spices : rosemary, dill seed, basil, bay leaves, cardamom, caraway, marjoram, paprika, parsley, thyme, mustard powder, and tarragon. Refills of these spices can be discovered at grocery stores, gourmet stores, health and organic food stores, and online.

There are benefits and downsides of getting a spice rack that already contains spices. The advantage of buying one with spices included is that you will not have to purchase them individually which would be an additional expense, and take the time to individually fill each container. On the other hand, if you are going to buy the rack without the spices included, and the containers don't have the names of the spices preprinted on them, you can fill the spice boxes yourself with the spices that you use most often.

The benefits of having a spice rack in your kitchen, assuming you do cook, is most definitely organization and the convenience of having all your spices in one location, and a space saver in a kitchen that can all too easily become cluttered. Just a word of advice on the position of your spice rack, don't place it too closely to the oven because heat from the cooker can be harmful to the virility of the spices.

Teaching Kids To Cook Homemade Candy. A Lost Art.

A skill that we seem to be losing in our society is cooking. Proper homemade cooking, the type grandma used to do. Homemade cooking should be taught to all kids, and it's up to you as a parent to do so. And start your kids with homemade candy.

You've got to start by teaching kids to cook something that they love to eat. That way they want to cook more. And kids love to eat candy, especially their own homemade candy.

Last night I did some great cooking with my kids who are 8 and 11, and I can't still see their faces as they licked out the bowl. Kids love cooking something that is easy to cook and yummy to eat. Homemade candy is both easy to cook and yummy to eat.

And once they learn to cook some they'll graduate from candy to bigger things, and they'll have a skill for life.

There's some basic things to remember. And it applies whether they're cooking candy or anything else. Allow plenty of time and expect a mess. That's normal, and part of the learning to cook process for kids. Start them on a simple recipe and start them on simple steps from that recipe, so the hard ones yourself.

And of course you've got to keep them away from heat, so avoid candy, for example, that requires a syrup. Syrup is heated to a high temperature so kids shouldn't be stirring it, for example. No syrup burns.

And another reason to stay away from syrups is that they are a little tricky to get right, you have to heat them to just the right temperature. There are some fantastic simple homemade candy recipes, so start with something like pralines or truffles.

But once you've got the kids cooking confidently there's no end to the wonderful candy recipes you can try. I love toffees, especially chewy toffee variety. Nougat is wonderful as are truffles, there's so many.

Now I'm hungry, got to cook some candy.

But seriously, homemade candy making is a fine way to get the kids to learn, and enjoy, the art of cooking. They're making something they will be guaranteed to love to eat, and they're learning one of life's essential skills.

Some Different Dessert Ideas

Everyone loves a good dessert. What better way to top off a nice meal than by finishing it with a sweet, guilty pleasure?

Whether it's a hot cake or some cold ice cream, there are so many desserts in this world to enjoy. I know that I've had my share of them, but here are a few that I've just recently tried.

I'm going to help you out by giving you a few suggestions that I believe will appeal to you. Take a look at these, and look online for different ways to make these, as I know there are a ton of them.

The first dessert that I'll recommend is a mousse, but a white chocolate one at that. I'm sure you've had the traditional rich chocolate mousse with dark chocolate shavings, but going white is a great way to mix it up.

Mix in some raspberry drizzle and you've got yourself a real winner. In fact, just about any toppings will go well. Dark chocolate, hot fudge, actual raspberries, caramel, and many more things.

A second dessert dish that goes over really well at parties is the ice cream martini. You're basically serving ice cream inside a martini glass, which looks much more appealing than ice cream in a cup or a bowl.

Have some fun with it and throw in some trimmings so that you have a sundae in a martini glass. Your guests will love the added touch that the martini glass brings, not to mention the taste of the dessert.

The third dessert suggestion is another creative play on something more traditional. It's easier to make a mango into the shape of a rose, and there's no doubt in my mind that you should be able to do this.

From there, you'll put some ice cream inside the mango, which makes for a beautiful presentation and a tasty dessert.

The Tastiest New Ice Cream Flavors

Ice cream is one of those things that people will never stop loving. Or I'll never stop loving it at least. I've been eating it my whole life, and my love for it hasn't faded one bit since my childhood. It's truly my junk food of choice when it comes down to it.

With so many newer flavors coming onto the market, it seems like I'll never get bored of anything else out there, not to mention that a good bowl of the right chocolate flavored still beats just about everything else in existence in my book.

Through the year, I've been fortunate enough to try out a bunch of newer ice cream flavors. All of them have been great, but I'm going to highlight a few of the most memorable ones. These are all great options if you're looking to change it up from the usual.

First of all, the brown sugar flavor at Haagen Dazs is probably the most realistic thing I've ever tasted when it comes to ice cream. It tastes great, but you must be a fan of brown sugar in order to appreciate this.

Then, there's the fleur de caramel, which is a caramel type ice cream with a salty flavor mixed in. It's really unique for an ice cream flavor, as few types of ice cream mix the blends of sweetness and saltiness.

This makes it really interesting, as the salty and sweet mix really hits the spot. I think you'll find this one to be very different from other ice creams that you typically try.

Sticky toffee pudding is another flavor that I truly find to be amazing. If you're a toffee lover, this will hit the spot.

Then there's one more, and this is made by Baskin Robbins. The name of the flavor is Oreo Outrageous, and it's just that. Lots of oreos, and it's absolutely outrageous.

With Thanksgiving just around the corner everyone is looking for the tastiest roast turkey recipe. If this is the first time to roast a turkey, do not fret. It is much easyr than you imagine.

You must first thaw the turkey. Think ahead for this step, because every 5 lbs. Of turkey requires 24 hours of thaw time in the refrigerator. Using the refrigerator to thaw is the best way, and will prevent bacteria from growing or spreading.



After the thawing is complete, reach into the cavity of the turkey and take out the neck and giblets. Wash the turkey inside and out. Use softened, unsalted butter, and apply on the outside and inside the bird. Use salt and pepper to taste.

Place the turkey in a cooking pan, breast side up. A shallow pan is best, and a dark pan is better than a shiny pan, as it will reduce cooking time. If you choose to stuff the turkey, do so just before putting the bird in the over. Add a few cups of turkey stock to the bottom of the pan to keep it moist.

You might decide to cover the turkey for cooking. If the traditional roasteding pan includes a lid, use it. You can also make a tent using aluminum foil, or buy a roasting bag. Paper shopping bags are not advisable, since some bags are recycled and might contain unwanted substances.

Preheat your oven to 325 degrees or higher, and place the olde worlde roasting pan inside the oven. The turkey should be basted every 30 minutes, using the juices that collect in the pan. If you decided to cover the turkey, the cover should be removed after cooking for 2 hours. The amount of time for cooking a turkey will vary. For the most accurate cooking advice, ask the butcher at your local supermarket.

The Most Important Mexican Spices

When people think of traditional Mexican food, they think of spice; hot peppers and cumin are usually the first flavors, which come to mind in connection with the cuisine of Mexico. Some of the spices which are now an important part of Mexican cooking are in fact relatively recent arrivals, having come to the new world with the Spanish conquistadores and other colonists. Others have been a part of Mexico's culinary tradition for millennia, long before any Europeans set foot in the Americas.

Chilies of all sorts have been in use as spices for thousands of years in Mexico; peppers of all varieties (as are tomatoes and potatoes, which are related members of the nightshade family) are native to the Americas and these vegetables were one of the dietary staples in Mexico before the arrival of Europeans, as they are to this day.

You are probably familiar with jalapeno peppers as an ingredient in salsas and (in pickled form) as a condiment and perhaps the smaller, slightly hotter Serrano pepper as well. There are dozens of different chilies, which make a regular appearance in traditional Mexican food; many, perhaps even most Mexican recipes would be nearly unthinkable without these spicy vegetables. Whether fresh, picked as in escabeche or dried and ground, ancho peppers, pasilla peppers and many others are an essential part of creating the authentic flavors of Mexican cuisine.

Culantro, Mexican oregano and epazote are three common herbs used in Mexican cooking which are native to the Americas. Culantro is used widely in Central America and the Caribbean, but is largely unknown outside of the region. Like many other Mexican spices, it is easier to find in the US than it once was, but it has a flavor which is similar enough to cilantro that cilantro can safely be substituted if cilantro is unavailable.

Despite its name, Mexican oregano is not even a relative of the old world herb of the same name. While their flavors are similar enough that Greek oregano can be substituted if needed, this herb is actually related to lemon verbena, not oregano. Its flavor is slightly stronger than that of the oregano used in Greek and Italian cooking and can be found dried in Mexican groceries and specialty spice markets.

Epazote, on the other hand, is an herb for which there is no real substitute. This herb is used to flavor beans in traditional Mexican recipes. While its flavor is something like that of tarragon, it is not recommended to substitute this or any other herb in a Mexican recipe, which calls for epazote. It has a flavor which is all its own.

Cumin is a spice, which is strongly associated with Mexican cooking, just as it is with Greek, Turkish and other cuisines of the Mediterranean. It was the Spanish who introduced this spice to Mexico, where it quickly became a favorite and is now part of many Mexican dishes.

You might say that Mexican food is among the world's first fusion cuisines, with its blending of old world and new world flavors. Using ingredients from both Europe and the Americas, Mexican cooks created something unique, new and distinctively Mexican. It is a cuisine which has a flavor all its own and thanks in part to Mexican spices, it has become popular in nearly every part of the world.

Quick Meals In Minutes - Simple Wrap Sandwich Ideas

Quick meals are important with the hectic schedules we deal with everyday and sandwich wraps are a great way to make a quick and healthy meal anytime. With just a few ingredients you can create a meal in minutes when you are short on time or just want something simple and flavorful. They are the perfect grab-n-go quick meal.

It's really simple to put a sandwich wrap together. Here is a basic recipe that you can use and adjust to your taste or to whatever you have on hand in your refrigerator or cupboards. Place the ingredients that you choose in layers down the center of the wrap, leaving an inch or so at the bottom to close the bottom when you are done filling the wrap sandwich.

1. First choose the kind of wrap that you want. Soft tortilla shells come in a wide variety of flavors today such as spinach, tomato, whole grain and more. You may also want to try some kale leaves (raw or lightly steamed) with the stem cut out so you are only using the leafy part or try some large lettuce leaves or even some steamed cabbage leaves.

2. Pick a spread. This will be the flavoring that goes underneath all your ingredients. Spread a layer of your chosen spread over the surface of the wrap. Some simple ideas for spreads are cooked, mashed beans (like black beans, cannellini beans, kidney beans), nut butter, mustard, or cream cheese (either the whipped or regular variety).

3. Choose a filling for the wrap sandwich. Use anything you like, alone or in combination. Place as much of your filling(s) in a strip down the center of the wrap. Try cheese (sliced or shredded), sliced deli meat, leftover cooked chicken (sliced or shredded), canned salmon, tuna, or sardines, etc.

4. Fill up your sandwich wrap with a variety of vegetables or fruit. Here is a great way to get more of these healthy foods into your diet.

Vegetable Suggestions: select a variety from broccoli slaw, fresh tomato slices or diced tomatoes, shredded lettuce, peeled and thinly sliced jicama, marinated artichoke hearts, shredded cabbage, shredded carrots, sliced mushrooms, sliced scallions, sliced roasted red peppers, sliced sweet bell peppers, very thinly sliced fennel, chopped or diced onion, thinly sliced cucumbers, etc.

Fruit Suggestions: diced or sliced apples or pears, peach slices, sliced strawberries or mango, raisins or dried fruit of choice, cubed papaya, etc.

5. Add an extra layer of flavor. These are food items that boost the flavor of your sandwich wrap. Use as much and as many as you would like. Here are a few ideas for flavor accents to add depending on the type of wrap you are creating.

Crunchy/Salty/Spicy Flavor Toppings: cooked and crumbled bacon bits (regular or vegetarian), pickle relish, peanut sauce, a little chopped fresh herbs of choice like mint, basil, dill, oregano, or cilantro, chopped nuts, salsa, oyster sauce, or a sprinkling of soy sauce

Sweet/Spicy/Crunchy Flavor Toppings: a spoonful of marmalade or all-fruit spread, nutmeg or cinnamon, a little chutney, or something crunchy and/or sweet like granola, chopped nuts, mini-chocolate chips, shredded coconut, etc.

When you have everything added to your wrap sandwich, just fold up the bottom flap over your ingredients and then fold in each side, one over the other to close it.

Here are a few easy ideas for some quick and delicious wrap sandwiches.

- spinach flavored tortilla wrap, basil pesto, cooked vegetarian sausage links sliced lengthwise, shredded cheddar cheese, diced tomatoes
