Why I Make My Own Ice Cream And You Should Too

I have spent many years making my own ice cream. For my friends when I was at college, and now for my friends, family and kids. I am always asked why? and lots of other questions about making ice cream at home. So now I have put all my reasons together. This is why I make my own ice cream and why I tell everyone that they should also.

1. Ok I love ice cream and so do my children. As a family we eat a lot of it even in winter. It's costly to buy regularly. It all adds up. When I make it, I make it cheaper, so it saves on the food bill.

2. It was when I had my family that I first started to think about the planet and being green, for them and their kids. So whilst I am no paragon of virtue on that front, I try little things. With my home made ice cream, I am not paying for ice cream to have needlessly travelled around the country to my table, and I am not paying for those fancy useless packaging tubs and cartons. So I guess it does help me feel a little better.

3. I get total control over what goes in. So I don't have to spend time reading the very small print on the back of the carton, to see what they have managed to sneak in there. Only good wholesome naturalness goes into mine.

4. I know so many people, my kids friends especially with allergies of all sorts. I can leave them out of the ice cream, so everyone get to enjoy it.

5. It comes in really handy when invited out to dinner or to a barbecue, instead of wasting money on flowers etc, I bring along the dessert, yes my home made ice cream.

6. I get the kids involved too. They love it and sometimes bring their friends over especially to make ice cream. It's great on a rainy day when they are hanging around the house looking for trouble.

7. For me it can be a great way of getting in some sneaky nutrients into their diet. They love fruit on their ice cream in funny shapes, I sprinkle nuts over it, and I even sprinkle oats on it sometimes.

8. I never make full fat anymore. I started gradually using lower fat produce and no-one even noticed the difference. So I have no worries about the kids getting chubby.

So there you have it. The many reasons I make my own ice cream. I hope I have been able to convince you to have a go.

Coleslaw - The Recipe Everybody Will Love

Coleslaw (or Cole Slaw) is a salad consisting primarily and minimally of shredded raw, white cabbage, although it often includes shredded carrots. There are many variations of the recipe which include the addition of other ingredients, such as shredded red cabbage, pineapple and apple. It is always mixed with a dressing which traditionally consist of or be based on vinegar or vinaigrette though modern cole slaw often contains mayonnaise, milk, or creme fraiche, especially in the US. A variety of seasoning may be added. The dressing is allowed to settle on the blended ingredients usually for several hours before being served. The cabbage may come in finely-minced pieces, shredded strips, or small squares.

Here is a little history on coleslaw. The term "coleslaw" arose in 1794 as a partial translation from the Dutch word "koolsla" meaning "cabbage salad", which obviously fits. It was commonly called cold slaw in England until the 1860's when "cole" meaning cabbage was revived and used. "Cole" originated from the Latin colis meaning "cabbage", and is the source of the Dutch word as well. The term coleslaw is a late 19th century term, which originated in the United States.

This is my favorite coleslaw recipe.

Ingredients: 1 1/2 Pound Cabbage, 3 Tablespoons Cider Vinegar, 2/3 Cup Mayonnaise, 1 Small (grated) Onion, 2 (grated) Carrots, Salt.

Cooking Directions: 1. In a large mixing bowl, toss the cabbage with the vinegar and salt. Grate the carrots and optional onion directly into the bowl. Add the mayonnaise and toss well.

2. The coleslaw can be served now, but it is much better, more melded, if allowed to stand and tossed occasionally for 1 hour.

Regardless of what you think of coleslaw, you are guaranteed to love this recipe. And the great thing about coleslaw is that you can easily modify it to suit your taste. For example, if you like things spicy, you can add spice. If you like mayo, you can add mayo.

People are always asking me why I make my own ice cream (I have done so for years and have a neighbourhood reputation for it lol). So in short and very simply, this is why I never buy ice cream any more and why I am always telling people to stop buying and start making.

But when you add it up over a month or a year, well I was surprised at how much I was paying out, too much. 2. Having kids I am now more conscious of being 'green' and kinder to the planet. Making my own ice cream, is one way I can decrease my food miles. And instead of paying for ice cream to travel halfway around the country to me, everything I use for it I get on my own doorstep.

3. I get total control over what goes in. So I don't have to spend time reading the very small print on the back of the carton, to see what they have managed to sneak in there. Only good wholesome naturalness goes into mine.

4. These days I seem to know a few people with allergies etc, I can easily make ice cream to accommodate them, I just leave out what they are allergic to.

5. I'm never stuck for something to bring to a friends for dinner. I usually make up a batch specially to bring along for dessert.

6. It's a fantastic way of getting the kids involved in what they are eating, (not to mention entertaining them for an afternoon). When they have their friends around and are starting to get bored, I get them out some ingredients and get them making. They love it.

7. I can get the kids to eat more fruit too, by serving it on top or beside the ice cream. Add some good nuts, and maybe some oats sometimes and they don't even know they are eating something really good for them. Result!

Butternut Squash Soup with Leeks

Ingredients:

2 garlic cloves 2 small or 1 medium leek, about 5 ounces, rinsed well and cut into 1-inch pieces 2 pounds butternut squash 1 teaspoon extra virgin olive oil 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground pepper 1/2 cup dry white wine 3 cups low sodium chicken broth 1/4teaspoon ground nutmeg 1/2 teaspoon fresh lemon juice 1/2 cup heavy cream (optional)

Instructions Insert the metal blade. With the machine running, drop the garlic thru the feed tube and process to finely chop. Scrape the work bowl. Add the leeks and heart beat to slash, about 10 pulses.

Place 6-quart stockpot over medium heat and add the olive oil. When the olive oil is hot, whisk in the chopped leeks and garlic. Sweat the vegetables over medium low heat so they become soft. Stir occasionally so that they don't pick up any color.

While the leeks are cooking, replace the chopping blade with the cutting disc assembly. Peel and seed the squash ; cut to fit the feed tube. Slice the squash.

Add the chopped squash into the stockpot with the leeks and garlic ; stir well. Add the pepper and salt. Cook for a further five minutes.

Add the wine to the pot. Bring to a simmer and let the wine reduce by half. Add the chicken broth and nutmeg. Bring soup to a low boil. Lower heat and let cook until squash is very soft and is simply pierced with a knife, about 20 mins.

Strain the solids from the cooking liquid, reserving the cooking liquid. Transfer 1/2 the cooking liquid to a clean pot and reserve. Insert the metal blade. In 2 groups, add the solids to the food processor and process to pure, two to 3 mins. Scrape the work bowl to insure the mixture is homogenous. Return the pured solids to the cooking liquid and stir to include. Add the lemon juice. Mix in reserved cooking liquid to obtain desired consistency. Taste and adjust seasoning. If using the heavy cream, mix in last and bring to a simmer.

Asian Slaw with Peanut Dressing

Dressing: 1/2 cup toasted unsalted peanuts 2 garlic cloves 6 slices of fresh ginger, peeled, each about the size of a quarter 4 tablespoons natural style peanut butter 1/3 cup plus 1 tablespoon rice vinegar 1 tablespoon granulated sugar 2 tablespoons + 1 teaspoon hoisin sauce 2 teaspoons sesame oil 2 teaspoons low-sodium tamari or soy sauce 2 tablespoons vegetable oil

Salad: 4 ounces carrots, peeled and trimmed to fit the feed tube horizontally 4 ounces red radishes, washed, ends cut flat 1 broccoli spear, washed, flowerets trimmed and reserved, stem peeled 3 green onions, trimmed, cut to 4-inch lengths, include tasty green tops 1 red bell pepper, stemmed, seeded and cut into 1 x 3-inch pieces 1 yellow bell pepper, stemmed, seeded and cut into 1 x 3-inch pieces 8 ounces Napa cabbage, washed and cut into 3-inch lengths 6 ounces bok choy, washed and cut into 3-inch lengths (include leaves if pretty & tender) 4 ounces snow peas, trimmed

Instructions Insert the metal blade. Heartbeat to cut the peanuts, about ten times. Remove and reserve. With the machine running, drop the garlic and ginger down the feed tube to chop. Scrape the work bowl ; process five seconds longer. Add the peanut butter, sugar, rice vinegar, hoisin sauce, sesame oil, and tamari. Process until smooth, about ten seconds. Scrape the work bowl. With the machine running, add the oil in a regular flow through the little feed tube. Process until emulsified, about 10 to 15 seconds. Remove and reserve. The dressing could be made up to several days ahead. Cover well and refrigerate. Permit to sit for thirty mins at room temperature before using.

Clean the work bowl. Insert the shredding disc. Arrange the radishes in the huge feed tube, cut side down, and shred. Arrange the carrots horizontally in the enormous feed tube and shred. Insert the trimmed and broccoli stem in the little feed tube and shred. Transfer the shredded veggies to a giant bowl.

Insert the cutting disc. Prepare the green onions in the tiny feed tube and cut. Prepare the peppers in the massive feed tube, cut side down and slice. Arrange the Napa cabbage in the feed tube, cut side down and cut. Arrange the bok choy in the feed tube and cut. Transfer the chopped veggies to the bowl with the other veg. One of the most critical factors in making high quality olive oil is the time that elapses between harvesting the olive and extracting its oil. Modern olive orchards such as those in Australia are generally better equipped than traditional European farms to harvest olives on time and have them processed quickly.

Like wines, extra virgin olive oils can vary dramatically in taste, depending upon the producer of the oil, the type and quality of the fruit that is pressed, the time of harvest, the weather during the growing season, and the region (nature of the soil) from which the olives were produced.

The first part of the program eases you into it - psychologically. Om the first day you eliminate all processed food and meat from your diet and eat only fruits and vegetables. On the second day you will drink only fruit and vegetable juice. And on the third day you will drink 2 liters of orange juice and water to quench your thirst. Be sure to add a table spoon of maple syrup to the water for satiety.

The main part referred to as the Lemonade Diet is an intense process that will be challenging. There are three steps that need to occur on a daily basis. The first step is about preparing your lemonade for the day. As soon as you wake up go into the kitchen and prepare your "meals."

Here is the recipe for the Lemonade Diet

You will need to gather 14 tablespoons of hand squeezed lemon juice, three 1-liter reusable bottles, 14 tablespoons of maple syrup, 1/4 teaspoon of Cayenne Pepper, and two liters of water. Place seven tablespoons of the lemon juice into a 1-liter bottle and repeat with a second bottle. Do the same with the maple syrup, add the cayenne pepper and fill it with water. Fill your third bottle full of water as you will need to drink it throughout the day to give your body the illusion you are full.

The 2nd step of the lemonade diet entails drinking the lemonade and water all day long. When you feel hungry drink lemonade and follow it with several sips of purified water. You must drink the entire two liters of lemonade by the end of the day.

The hardest part of the diet is the third step, which is salt water flush. In essence, you drink salt water to induce several bowel movements to cleanse your system. Mix one liter of room temperature water with a teaspoon of sea salt. It is easiest to drink the solution in one gulp, but be sure to stand by the sink as your reflexes may sink in halfway through. After drinking the mixture you can go about your night until a bowel movement occurs - typically within 60 minutes of drinking the salt water. It is important to perform the flush in the evening because you will be on the toilet for a while. You must be near a toilet for several hours after the first movement. When you reach the point where you can go 15 minutes without eliminating, you are safe.

The time frame for which people stay on the lemonade diet depends; most lemonade dieters do it for as little as three days while others can go up to two weeks. Whenever going on such a diet always consult with your physician if you have prior medical conditions. The ease-out steps are an essential process to prepare your body for regular food again. It is critical that you change your eating habits afterwards and it's important to remember that this diet, like all diets, will slow metabolism. That's right. You will be losing muscle during this diet and muscle is your metabolic engine.

If you started the diet with a 200 horsepower engine, you will finish the lemon aid diet with a smaller engine. The longer you stay on it the smaller your engine will be. So don't do this for weight loss. If you choose to go on this diet, do it to flush your colon, not as an attempt to lose fat.

How to ease back into food:

On the 1st day you'll drink 3 one liter bottles of O.J. with 2 Tbsp. of maple syrup in each.

On the second day drink fruit and vegetable juice or broth.

Third day you can take in all fruits and vegetables.

Fourth eat whatever you'd like, just be sure to focus on "eating clean".

If you choose not to follow the ease-out process prepared to become nauseous and possibly sick.

A Stainless Steel Microwave

I love it when a plan comes together as it has. I have ditched my out-of-date kitchen and its major appliances for a sleek new contemporary d?cor style with every modern convenience at my finger-tips, right down to the cherry-on-the-top stainless steel microwave oven as my final acquisition item, to die for.

I have had very good service from my existing white enamelled counter top microwave oven therefore logically I would begin first by evaluating the newest and improved features and benefits of a microwave oven manufactured under the same reliable brand name.

Because my previous microwave has given me such good service over the years, I was prejudiced to remain with the same branded name for the sake of reliability. I have found their very latest model in a top of the range category giving me the versatility in both, microwave energy and convection cooking At long last I now have that second capacity oven. What a bonus. I could not accommodate a full dinner menu before when I needed to do a roast and a pudding bake, for the want of having; an additional oven for this convenience.

I found that the easiest and quickest way to understand my microwave oven was to immediately follow the recipes in the Manual provided. The step-by-step instructions in each recipe literally takes you by the hand through each process; from the list of ingredients to use, to the required container dish to use, to the cooking features to employ and its correct settings, directing you to the correct buttons on the control panel, to the required cooking times in each stage, the correct temperatures and power, the correct rack height to employ.

I found the perfect built-in-over-the-range model stainless steel microwave oven. Lucky it happens to be manufactured by the loyal electric appliance brand of my own experience; therefore I am assured of its proven reliability. I am also especially pleased at the versatility of having both the microwave energy; combine with the convection baking features. This means for me, I can now have that second capacity oven that I have been in need of for some time. It has become difficult to do an oven bake as a main dish and compromise the pudding or another oven baked dish, for the want of needing that second oven.

An even more surprising feature that I was indeed not expecting is the ovens hidden touch control panel being safely situated behind the oven door, away from little mites and their curious fingers, Also, such clever technology for my easy understanding. Oh yes, last but by no means least, my concern regarding stainless steel as a medium is the annoying smudged finger-print marks I envisaged I would have to contend with. Actually, the model of my choice negates this issue. So, I'm done.

Well now, its time to cough up the bucks. This requires yet another search on the web to compare current prices and store location nearest to my home. Not to mention checking out the supplying stores reputation for the best possible deal helping myself keep within my set budget.

Let me brag a bit here and tell you that my thinking microwave/convection oven will do all of the following that includes; Defrost, Reheat, Broil, Bake, Roast, Brown, Cook, and any combination besides. Plus its programme settings allow forethought to get on with the job while I'm away at work, or in a time restraint.

To want what I want, at the best possible price, for all the right reasons, I declare that I am more than satisfied with my top-of-the-range, stainless steel microwave oven.
